The producer

Pink Bourbon is one of Colombia’s most sought-after varieties, celebrated for its vibrant, expressive cup despite its lower yields and demanding cultivation. For this release, we’re showcasing two distinct expressions of the same exceptional coffee: Natural and Washed.

The Pink Bourbon seedlings are first grown at El Fénix in Quindío by Raw Material, a green coffee social enterprise focused on increasing producer profits. They are then shared with farming families in Villamaría, helping establish the variety across the region.

For this Washed lot, the coffee is processed using the Water Pillow technique, developed at El Fénix. Whole cherries are sealed beneath a plastic membrane with cool water layered above, creating a stable, low-temperature, oxygen-limited fermentation, before cherries are pulped and the exposed beans are washed and graded. This controlled process enhances sweetness and complexity while preserving the clean, vibrant character of a washed coffee.

Expect a bright, elegant cup with notes of Pink Lady apple, Sugarcane and Quince Jam.
