The producer

Pink Bourbon is one of Colombia’s most sought-after varieties, celebrated for its vibrant, expressive cup despite its lower yields and demanding cultivation.

The Pink Bourbon seedlings are first grown at El Fénix in Quindío by Raw Material, a green coffee social enterprise focused on increasing producer profits. They are then shared with farming families in Villamaría, helping establish the variety across the region.

Producer Rubiel Orrego has lived all his life on the La Aurora Farm in the municipality of Villamaria. La Aurora serves as a central collection point for cherry that is purchased at stable and predictable prices from coffee producers in the area surrounding the farm.

Pink Bourbon Natural (200g)

For this Natural lot, the coffee is processed using the Water Pillow technique, developed at El Fénix. Whole cherries are sealed beneath a plastic membrane with cool water layered above, creating a stable, low-temperature, oxygen-limited fermentation. This extended fermentation enhances clarity, sweetness and fruit character before the coffee is carefully dried on raised beds.

Expect a bright, juicy cup with notes of watermelon, papaya and kiwi.

Pink Bourbon Washed (200g)

For this Washed lot, the coffee is processed using the Water Pillow technique, developed at El Fénix. Whole cherries are sealed beneath a plastic membrane with cool water layered above, creating a stable, low-temperature, oxygen-limited fermentation, before cherries are pulped and the exposed beans are washed and graded. This controlled process enhances sweetness and complexity while preserving the clean, vibrant character of a washed coffee.
