The producer
In the small town of Santa Maria de Dota, at the centre of the coffee growers of Tarrazu that contribute to it, is the coffee processing mill and facilities belonging to Coope Dota. Established back in 1960, they currently represent around 900 small growers and hold the title as the first coffee processor in the world to be certified as carbon neutral, back in 2011.
The project aims to consider and support the needs of the women within the cooperative, creating a space to share and work through the challenges of being a female in a male dominated coffee producing world.
The cherries are delivered at peak ripeness (around 23 Brix) to the receiving station, as is customary in Costa Rica. A dedicated section ensures proper separation and traceability of the lot. After resting for 24 hours, the coffee is pulped using a demucilager, then spread out on a specialized concrete patio to sun-dry, where it's raked 7-8 times a day to ensure even drying.
