The producer
For our milestone 12th-anniversary release, we’re excited to welcome back a true Saint favourite: Capulinero. This spectacular lot captured our hearts and perfectly embodies twelve years of chasing the extraordinary. Grown by the visionary Ureña family at La Montañita farm in Tarrazú, this coffee was born from an unexpected twist at the Beneficio La Chumeca micromill.
When sudden heavy rains disrupted the usual processing, the Ureña family adapted, sparking an accidental three-phase fermentation. The coffee was named Capulinero after the migratory birds that mysteriously arrived at the beginning of the process and left just as it came to an end.
Embracing this happy accident, the family developed a daring sequence of anaerobic fermentation, outdoor oxidation and a secondary anaerobic seal, transforming a weather setback into something truly extraordinary.
That experimentation comes through in the cup. Expect a spectacularly complex, winey profile with layers of black cherry and tawny port, balanced by rich dark chocolate truffle and a beautifully deep, lingering finish.
