Born into coffee is a familiar story for coffee producers, it’s often passed down through generations and the same tricks are taught and passed down with little regard to innovation and taking risks. Diana and Hector Ovalle have had a long history with coffee, since the early 1800’s their family has been producing coffee in the Huehuetenango region of Guatemala and have been striving for quality ever since taking over. They use the best pre and post harvest practices, often utilising brix measurements and humidity control, allowing a much higher quality and evenness to their lots.
