Local farmers deliver and sell their coffee cherries to Villamaría, in Caldas, Colombia. This is an uncommon model in a country where most producers sell parchment to cooperatives or process it themselves. This approach prioritises stable prices and sustainable farmer income, expanding regional production while improving overall quality.  Freshly harvested cherries are delivered and sold to Villamaria’s buying point ‘La Aurora’, where they are floated, sorted, and rested in cherry for 24 hours. The next day, they are taken to ‘Jamaica’, the processing station, for 48 hours of additional fermentation in cherry.
